7-Day Belize Itinerary: Jungle Waterfalls to Island Life

Belize may be a small country, but it feels like several completely different worlds tucked into one beautiful destination. You can wake up surrounded by the misty forests of Mountain Pine Ridge, then trade the sound of waterfalls for the rhythm of the Caribbean in San Pedro.
That contrast is exactly what makes this seven-day Belize itinerary so special.
It gives you time to breathe, explore, try something new and still enjoy the moments that aren’t scheduled. Because the best trips aren’t about racing from one attraction to the next. They’re about experiencing a place deeply enough that you actually remember how it made you feel.
Here is how to experience the jungle and island sides of Belize in one unforgettable week.
Days 1–2: Settle Into the Jungle at GAÏA Riverlodge
Your Belize adventure begins in the Mountain Pine Ridge Forest Reserve, where the Caribbean coastline gives way to pine forests, jungle trails and hidden waterfalls.
GAÏA Riverlodge is perched above the Five Sisters Waterfalls, creating the kind of setting that makes you stop talking for a moment when you first see it. The lodge feels remote and peaceful without asking you to give up comfort. You can settle into a mountain cabana, sit on your private veranda and listen to the falls below.
And honestly? That may be exactly how you want to spend your first afternoon.
Swim Beneath Five Sisters Waterfalls
Instead of a traditional resort pool, GAÏA gives you access to natural freshwater pools at the base of the falls. You can make your way down to the river, swim in the cool water, stretch out in a hammock or simply listen to the sound of the waterfall.
This isn’t a stop where you take one photo and move on. It’s a place to slow down and stay awhile.

Mountain Pine Ridge gives you options. Depending on your energy and interests, you might:
Explore the surrounding forest trails
Ride one of the lodge’s complimentary bicycles
Visit nearby waterfalls or limestone caves

Stay right where you are with coffee, a book and a waterfall view
There’s no prize for doing everything. Sometimes the bravest travel decision is choosing what genuinely sounds good to you.
At the end of the day, gather for dinner overlooking the canopy as the jungle settles into evening. It’s a beautiful setting for the first conversations and connections of the week.
Day 3: Trade the Ridge for the Reef
After one last jungle morning, it’s time for one of the most exciting parts of this Belize itinerary: traveling from Mountain Pine Ridge to San Pedro.
The journey takes you back across the mainland to Belize City, where a short domestic flight carries you to Ambergris Caye. From the air, the landscape changes again as the green mainland gives way to blue water, islands and reef.
When you arrive in San Pedro, island life begins almost immediately.
Golf carts are the favorite way to get around Ambergris Caye, so once you settle into your accommodations, you can head into town, look for a waterfront restaurant, visit local shops or simply stay put and enjoy the pool and ocean.
After the quiet seclusion of the jungle, the color and energy of San Pedro feel like the start of an entirely new vacation.
Day 4: Snorkel the Belize Barrier Reef
You can’t plan a Belize itinerary without making room for the reef.
Belize is home to part of the Mesoamerican Barrier Reef System, and a private snorkeling excursion gives you the chance to experience its clear water and marine life without feeling rushed through a crowded tour.
Depending on the route and conditions, you may see tropical fish, rays, sea turtles and nurse sharks. Whether you’re an experienced snorkeler or putting on a mask for the first time, this is one of those experiences that can feel both thrilling and surprisingly peaceful.
The best part of a private excursion is being able to enjoy it at your group’s pace. There’s time to ask questions, catch your breath and take in what’s happening around you.
Afterward, the afternoon can be as easy as you want it to be. Lounge beside the pool, sit on the dock, explore the quieter southern part of the island or take a golf cart into town.
Day 5: Take the Golf Carts to Secret Beach
Secret Beach may no longer be much of a secret, but it’s still one of the most enjoyable ways to spend a day on Ambergris Caye.
Getting there is part of the fun. The golf-cart ride takes you across the island to calm, shallow water on the western side. Once you arrive, choose your own beach-day personality.
Are you the woman ordering lunch at an in-water table? Claiming a shaded daybed under a palapa? Trying a paddleboard? Floating with a drink in your hand? Or doing a little bit of everything?
The water is calm, the atmosphere is relaxed and there’s no complicated itinerary to follow. Stay for a few hours, enjoy the view and let the Caribbean do what it does best.
Then return to your villa for dinner and the kind of conversations that only seem to happen after a full day of sunshine and adventure.
Day 6: Follow Your Own Island Rhythm
Every good group itinerary needs breathing room.
Your final full day in San Pedro is the day to follow whatever has been calling to you. You might:
Sleep a little later and enjoy coffee by the water
Explore San Pedro’s local restaurants, shops and art
Schedule a massage
Spend the afternoon beside the pool
Take more photographs while the Caribbean light is beautiful
Enjoy one last golf-cart adventure
Do absolutely nothing without feeling guilty about it
